05 - Brush or drizzle the meatballs with the remaining olive oil.

07 - Allow meatballs to rest for 3 minutes before serving.

# Expert Advice:

01 -
  • These meatballs are secretly packed with veggies, making every bite flavorful and nourishing.
  • They're easy to prep, quick to cook, and the leftovers taste just as good reheated for lunch.
02 -
  • If the spinach mixture goes in while still hot, you'll end up with mushy meatballs that fall apart.
  • Switching to ground turkey works just as well but can be a little drier—add a splash of olive oil if you do.
03 -
  • Baking instead of frying keeps the meatballs moist and your stovetop clean.
  • Letting the sauteed spinach mix cool before stirring in prevents soggy, falling-apart meatballs every time.
