01 - 2 cups plain Greek yogurt (0% or 2% fat)
02 - 1/2 cup natural peanut butter (smooth or crunchy)
03 - 3 tablespoons honey or maple syrup
04 - 1 teaspoon pure vanilla extract

05 - 1/3 cup dark chocolate chips (optional)
06 - 2 tablespoons crushed peanuts (optional)

→ Lining

07 - Paper mini muffin liners or silicone molds

# How To Make:

01 - Line a mini muffin tin with paper liners or arrange silicone candy molds on a flat tray for easy release after freezing.
02 - In a large mixing bowl, whisk together the Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract until the mixture is completely smooth and no streaks remain.
03 - Using a small spoon or cookie scoop, portion approximately 1 tablespoon of the mixture into each liner or mold, filling evenly.
04 - If desired, sprinkle dark chocolate chips and/or crushed peanuts over the top of each filled cup, pressing gently to adhere.
05 - Place the tray in the freezer and chill for at least 2 hours, or until the bites are completely firm and frozen through.
06 - Remove from the freezer and let the bites rest at room temperature for 2 to 3 minutes before eating for the best creamy texture.

# Expert Advice:

01 -
  • Each bite packs about 4 grams of protein, so you can eat six of them and actually feel good about it.
  • No oven, no stove, no fancy equipment, just a bowl and a freezer and about fifteen minutes of your time.
  • The texture is somewhere between ice cream and fudge, and that alone is reason enough to keep a stash in your freezer at all times.
02 -
  • Do not skip greasing or lining your molds unless you enjoy chiseling frozen yogurt out of metal tins with a butter knife at eleven at night.
  • Natural peanut butter separates, so stir it thoroughly before measuring or your bites will have an oily layer on top that looks unappetizing once frozen.
03 -
  • Let the yogurt and peanut butter come closer to room temperature before mixing so they blend into a silky batter without aggressive whisking.
  • Doubling the recipe is effortless and strongly recommended because twenty bites sounds like a lot until you share them with one other person.
