# Expert Advice:

01 -
  • The contrast between shattering crispy outside and molten cheese inside makes people pause mid conversation
  • They come together faster than delivery would arrive and taste infinitely better
  • I've never seen a single leftover, not even at parties where everything else gets picked at
02 -
  • Cold cheese sticks create better structure so they don't melt completely before the crust is golden
  • Crowding the pan drops the oil temperature and makes them soggy instead of crisp
  • Let them cool just a minute or the cheese will burn your mouth but not much longer or you lose the pull
03 -
  • Roll the bread thinner than you think you need to, it puffs when it hits the hot oil
  • Freeze assembled but uncooked roll ups on a baking sheet, then transfer to bags for emergency appetizers any time
